BANANA CAKE

  • 1-1/4 cups mashed bananas
  • 3 eggs
  • 2/3 cup buttermilk or sour milk
  • 2/3 cup Crisco oil
  • 1-2/3 cups sugar
  • 1 teaspoon vanilla
  • 2-1/2 cups flour
  • 1-1/4 teaspoon baking powder
  • 1-1/4 teaspoon baking soda
  • 1 teaspoon salt

1. Preheat oven to 350 degrees.

2. Lightly grease and flour bottom of 9 X 13 pan.

3. Combine all ingredients. Mix with electric mixer until well blended.

4. Bake 30 - 40 minutes. Do not overbake.

CREAM CHEESE FROSTING

  • 1 pound confectioner's sugar
  • 1 stick butter, softened
  • 1 package (8 ounce) cream cheese

1. Beat ingredients together.

2. Spread on cooled cake.
