OLD TIMEY CHICKEN AND RICE

  • 4 chicken breasts
  • 3 stalks of celery
  • 1 whole white onion
  • 1 bell pepper
  • 1 small jar of pimemtos
  • 2 cups uncooked rice
  • 1 can cream of chicken soup
  • 8 cups water
  • Salt, pepper, and garlic powder to taste
1. In a large pot, combine 8 cups water, chicken breasts,
celery, onion and bell pepper. Cook until chicken is done.

2. Remove chicken and debone. While chicken is cooling,
add 1 small jar pimentos and 2 cups of uncooked rice mixture.
Simmer for 30 minutes or until rice is done.

3. Add cream of chicken soup and chicken pieces.

4. Cover and let stand. This thickens as it sits.
